Region: Castelo Branco / Matured cheese from raw milk from sheep and goats, of variable consistency, obtained by slow draining the curd after coagulation of milk and addition of rosemary. Semi-hard crust of well-formed, thin and full and semi-hard to semi-soft mass, unctuous, with some irregular eyes, moderately buttery. With a intense but pleasant aroma, mild flavour with rosemary. This cheese is produced in Castelo Branco (in the interior and mountain region of Beira Baixa) and has a minimum ripening period of 35 days
