Region: Castelo Branco / Matured cheese from raw milk from sheep and goats, of variable consistency, obtained by slow draining the curd after coagulation of milk and addition of Oregano. Semi-hard crust of well-formed, thin and full and semi-hard to semi-soft mass, unctuous, with some irregular eyes, moderately buttery. With an intense but pleasant aroma, mild flavour with Garlic and Parsley. This cheese is produced in Castelo Branco (in the interior and mountain region of Beira Baixa) and has a minimum ripening period of 35 days
